Garlic Oyster Sauce Lettuce
Garlic Oyster Sauce Lettuce
- Prepare two sauces. First, a starch slurry: combine 1 tablespoon potato starch with a little less than half a bowl of water (do not reduce the water). Second, an oyster sauce mixture: in a bowl, whisk together 2 tablespoons light soy sauce, 1 tablespoon oyster sauce, 1/2 tablespoon sugar, and a splash of water; set aside.
- Finely mince the garlic and set aside.
- Trim the base of the lettuce, then blanch. Add a little oil and salt to the water before blanching. Cook the lettuce for about 20 seconds, then drain and arrange on a serving plate.
- Heat oil in a pan and fry the minced garlic over low heat until fragrant. Use low heat to prevent the garlic from burning.

Instructions
Step 1
Prepare two kinds of sauce. One is a water starch mixture: add one tablespoon of potato starch, then add less than half a bowl of water and set aside (this water must not be omitted); the other is the oyster sauce mixture: add two tablespoons of light soy sauce, one tablespoon of oyster sauce, half a tablespoon of sugar, and an appropriate amount of water to the bowl, stir well and set aside.
Step 2
Mince the garlic and set aside.
Step 3
Cut off the root of the lettuce and blanch it. Before blanching, add an appropriate amount of oil and salt to the water. Blanch the lettuce for about 20 seconds, then remove and arrange on a plate.
Step 4
Heat oil in a pan, add the minced garlic on low heat and stir-fry until fragrant. Do not use high heat to prevent the garlic from burning yellow.
Step 5
After the garlic is fragrant, add the oyster sauce mixture and stir until combined.
Step 6
Pour in the water starch mixture. Once the sauce thickens slightly in the pan, check how much sauce there is — if it is too thin, cook a bit longer; if it is too thick, turn off the heat and add more water. You can also taste for saltiness and adjust the water and salt amounts to your taste. Note: At this point the sauce may become very thick immediately after adding the water starch, which means there was not enough water in the starch mixture, so add water right away — even a little extra is fine, as the water will evaporate. Also taste for saltiness at this step; don't assume two tablespoons of light soy sauce will be too salty, because the sauce that coats the vegetables is actually not much.
Step 7
Finally, add a few drops of sesame oil.
Step 8
Once everything is ready, pour the sauce over the plate, and the oyster sauce lettuce is done.
