Garlic Ribs

Step 1
Use an appropriate amount of ribs.

Soak in clean water for half an hour.

Wash off the bloody water.

Mince the garlic into a paste; reserve half for marinating and keep the other half for stir-frying later.

Sprinkle the ribs with scallion, ginger, garlic, Sichuan peppercorn, and dried red chili, then pour in appropriate amounts of salt, light soy sauce, dark soy sauce, and oyster sauce.

Add the minced garlic and an appropriate amount of cornstarch.

Mix everything evenly by hand, cover, and marinate for thirty to forty minutes.

Heat an appropriate amount of oil in the wok to about forty to fifty percent hot; if the oil is too hot, the ribs will burn instantly.

Fry slowly over low heat for about fifteen minutes. Low heat is essential.

Fry until the ribs turn brownish-red.

Remove and drain the oil for later use.

Leave a little oil in the wok, add scallion, ginger, garlic, Sichuan peppercorn, dried red chili, and star anise, and stir-fry over low heat until fragrant.

Stir-fry a few times until the ribs are dry and crispy rather than greasy and infused with rich garlic aroma, then turn off the heat and plate.
