pork loin, thinly sliced 200g
garlic scapes, cut into 2-inch pieces 300g
vegetable oil 2 tablespoons
soy sauce 1 tablespoon
Shaoxing wine or dry sherry 1 teaspoon
salt 1/2 teaspoon
white pepper 1/4 teaspoon
sugar 1/2 teaspoon

Marinate the pork

Toss the sliced pork with soy sauce and Shaoxing wine. Let it sit for about 10 minutes while you prep the garlic scapes.

Stir-fry the pork

Heat oil in a wok over high heat until it shimmers. Add the marinated pork and spread it out in a single layer. Let it sear for 30 seconds, then stir-fry until just cooked through, about 2-3 minutes. Remove and set aside.
