Marinate the pork
Toss the sliced pork with soy sauce and Shaoxing wine. Let it sit for about 10 minutes while you prep the garlic scapes.

Stir-fry the pork
Heat oil in a wok over high heat until it shimmers. Add the marinated pork and spread it out in a single layer. Let it sear for 30 seconds, then stir-fry until just cooked through, about 2-3 minutes. Remove and set aside.

Cook the garlic scapes
Keep the wok hot and add the garlic scapes. Stir-fry vigorously for 2-3 minutes until they turn bright green and become crisp-tender.

Combine and season
Return the pork to the wok. Sprinkle in salt, white pepper, and sugar. Toss everything together for another minute until well combined and heated through. Serve immediately.
