Ingredients

medium shrimp, peeled and deveined 8-10 pieces
napa cabbage or Chinese cabbage 1/2 medium head, sliced into thin strips
glass noodles (cellophane noodles) 1 ounce
garlic cloves, minced 4-5 cloves
vegetable oil 2 tablespoons
light soy sauce 1 tablespoon
sesame oil 1 teaspoon
salt to taste
chopped green onions for garnish 1 tablespoon

Prepare the noodles and cabbage

Soak the glass noodles in cold water for 15-20 minutes until they become soft and pliable. Drain well and spread them evenly across a shallow steaming plate or bowl. Arrange the cabbage strips on top of the noodles in a neat layer.

Prep the shrimp

Using a sharp knife, slice each shrimp horizontally almost through to the other side, then open it up like a book. This creates a butterfly shape that cooks evenly and looks beautiful. Season lightly with salt.

Arrange and season

Place the prepared shrimp on top of the cabbage, alternating them in a decorative pattern. In a small bowl, mix together the minced garlic, soy sauce, and sesame oil. Drizzle this mixture evenly over the shrimp and vegetables.

Steam to perfection

Bring water to a vigorous boil in your steamer. Carefully place the plate in the steamer, cover tightly, and steam for 8-10 minutes until the shrimp turn pink and opaque, and the cabbage is tender but still retains a slight crunch.

Finish and serve

Carefully remove the steaming plate from the pot (watch for hot steam). Heat the vegetable oil until it just begins to smoke, then carefully pour it over the dish to create a fragrant sizzle. Garnish with freshly chopped green onions and serve immediately while hot.
