broccoli florets 2 cups
large shrimp, peeled and deveined 1/2 lb
garlic cloves, minced 3

Blanch the broccoli

Bring a pot of salted water to a boil. Add the broccoli florets and cook for about 2 minutes until bright green and slightly tender. Drain and rinse with cold water to stop the cooking. This quick blanch keeps the broccoli crisp and vibrant.

Pat the shrimp dry with paper towels. Sprinkle with salt and black pepper, toss to coat, and set aside while you heat the wok.
