Crown daisy, also known as shungiku, is a beloved leafy green in Japanese cuisine with a distinctive slightly bitter, aromatic flavor. This simple stir-fry lets the vegetable shine while adding just enough garlic for depth.

Ingredients

crown daisy (shungiku) 200g
garlic cloves, minced 3 cloves
peanut oil 2 tablespoons
salt 1/2 teaspoon
optional: pinch of sugar to balance bitterness

Prep the greens

Trim the tough ends from the crown daisy stems. Wash thoroughly under cold water and shake dry. Cut into 2-inch sections, keeping tender leaves and stems together.

Bloom the garlic

Heat peanut oil in a wok or large skillet over medium-high heat until shimmering. Add minced garlic and stir-fry for about 30 seconds until fragrant and just starting to turn golden. Watch carefully to avoid burning.

Stir-fry until just wilted

Add the crown daisy all at once. Stir-fry vigorously for 1-2 minutes until the leaves are wilted but still bright green and the stems retain a slight crunch. Season with salt and a tiny pinch of sugar if desired.
