A quick and vibrant side dish featuring tender crown daisy leaves sautéed with aromatic garlic. This light, healthy stir-fry comes together in minutes and showcases the delicate flavor of this unique green vegetable.
Story
Crown daisy, also known as shungiku, is a beloved leafy green in Japanese cuisine with a distinctive slightly bitter, aromatic flavor. This simple stir-fry lets the vegetable shine while adding just enough garlic for depth.
Ingredients
Instructions
Prep the greens
Trim the tough ends from the crown daisy stems. Wash thoroughly under cold water and shake dry. Cut into 2-inch sections, keeping tender leaves and stems together.
Bloom the garlic
Heat peanut oil in a wok or large skillet over medium-high heat until shimmering. Add minced garlic and stir-fry for about 30 seconds until fragrant and just starting to turn golden. Watch carefully to avoid burning.
Stir-fry until just wilted
Add the crown daisy all at once. Stir-fry vigorously for 1-2 minutes until the leaves are wilted but still bright green and the stems retain a slight crunch. Season with salt and a tiny pinch of sugar if desired.
Serve immediately
Transfer to a serving dish and serve hot as a side dish. The vegetable is best enjoyed right after cooking while still vibrant and crisp-tender.
