Instructions
Prep work
Smash the water chestnuts into minced pieces with the flat of a knife. Wash the shiitake mushrooms, soak until soft then dice. Wash the green vegetables, cut into appropriate sizes then blanch in boiling water.
Marinate the ground pork
Combine the ground pork with the marinade (potato starch, egg, water, soy sauce, sugar, salt) in a bowl and mix until evenly combined.
Pound and combine
Pound the marinated ground pork from Step 2 until it develops a sticky, springy texture, then add the prepared ingredients from Step 1 and mix well.
Cook and steam
Lightly rinse the germ rice, soak for 1 hour then drain. Place into a clay pot with the water, cover and bring to a boil over high heat. Once the water has evaporated, reduce to low heat. Quickly spread the mixture from Step 3 on top and gently press into a patty shape. Drizzle the oil around the edge of the clay pot, cover and continue cooking on low heat for 5 minutes. Turn off the heat and let it steam for 15 minutes. Uncover, drizzle the soy sauce and sprinkle with chopped green onions. Arrange the blanched green vegetables on the side and serve.
