Instructions

Prepare the Crab
Remove the shells from the crabs, wash them thoroughly, and cut them into pieces.

Make the Sauce
In a bowl, combine the clear broth, salt, MSG, white pepper powder, scallion, garlic, starch, sesame oil, and oyster sauce. Mix well and set aside.

Fry the Crab
Drop the crab pieces into a wok with vigorously hot oil and briefly fry them, then remove from the oil.

Stir-Fry and Finish
Leave a little base oil in the wok, add the scallion white segments to release their aroma, then add the crab and pour in the cooking wine. Quickly cover with a lid for a moment, pour in the prepared sauce, toss everything evenly, and serve.
