This humble dish relies on just a few ingredients to create something greater than the sum of its parts. The key is using fresh cabbage and letting the ginger bloom in hot oil before adding the vegetables.

Ingredients

Shandong or napa cabbage 1 medium head (about 1 lb)
Fresh ginger root 2 inches, smashed
Vegetable oil 2 tablespoons
Salt to taste

Instructions

Prep the vegetables

Cut the cabbage in half lengthwise, then chop into bite-sized pieces. Smash the ginger with the flat side of a knife to release its oils.

Bloom the ginger

Heat oil in a wok or large skillet over medium-high heat until shimmering. Add the smashed ginger and cook for about 30 seconds until fragrant.

Stir-fry the cabbage

Add the cabbage pieces and toss to coat evenly with the ginger-infused oil. Cover and cook for 3-4 minutes, stirring occasionally, until the leaves are wilted but still have a slight crunch.

Remove the ginger pieces. Season with salt to taste, toss well, and serve immediately while hot.
