Ginger Tea (Wedang Jahe
A spicy, soothing ginger tea, perfect for cold weather or when you're feeling under the weather.
Ingredients
fresh ginger (about 2 palm-sized ginger pieces)
8 oz
water
3 quart
pandan syrup (see separate recipe, add to taste)
about 1.5 cup
Instructions
1
Prepare Ginger
Place the ginger on a cutting board, and pound it with the flat side of a chef's knife, the bottom of a large glass, or a meat tenderizer until the skin cracks to reveal the inner flesh and juice starts to flow.
2
Brew Tea
In a medium pot, combine the ginger, water, and syrup (to taste). Bring to a boil over high heat. Reduce to medium-low heat and simmer for at least 45 minutes. The liquid will turn golden yellow. The longer it simmers, the stronger the tea flavor.
3
Serve
Remove the ginger pieces, pour the tea into cups, and serve hot.
