Ginseng Goji Berry Liquor

Ingredients

Ginseng (roasted, sliced) 20 g
Goji berries (impurities removed) 350 g
Prepared Rehmannia root 100 g
Rock sugar (caramelized to golden yellow) 400 g
Baijiu (Chinese white liquor) 10 kg

Instructions

1

Prepare Medicinal Ingredients

Roast the ginseng and slice it, remove impurities from the goji berries, place them in a gauze bag, tie the opening securely, and set aside.

2

Caramelize Rock Sugar

Place the rock sugar in a pot, add an appropriate amount of water, heat and stir until fully melted and boiling, continue cooking until it turns golden yellow, then filter while hot through gauze to remove solids and set aside.

3

Soak and Filter

Pour the baijiu into a ceramic liquor jar, add the gauze bag containing ginseng and goji berries, seal the jar tightly, and let it soak for 10 to 15 days, stirring once daily. When the medicinal flavor is very faint, remove the herbal bag, filter out sediments through fine cloth, add the prepared rock sugar and stir to combine, let the mixture stand then filter again; the finished liquor is ready when it is clear.
