Bloom the yeast
Pour warm water (around 100°F/38°C) into a small bowl. Whisk in the yeast and honey until dissolved. Let sit for 5 minutes until the mixture becomes foamy on top.
Mix the dry ingredients
In a large bowl, whisk together the buckwheat flour, psyllium husk powder, and salt until well combined.
Form the dough
Pour the foamy yeast mixture into the dry ingredients. Stir with chopsticks or a fork until a shaggy, sticky dough forms. The dough will be softer than wheat dough—this is normal.
Knead and rest
Transfer to a floured surface and knead gently for 2-3 minutes. Form into a ball, place in a lightly oiled bowl, cover with a damp towel, and let rise in a warm spot for 30-45 minutes until doubled.
Shape and steam
Punch down the dough and divide into 6 equal portions. Roll each into a smooth ball. Place on parchment-lined steamer basket, spacing them apart. Steam over boiling water for 15-18 minutes. Remove and let cool slightly before serving.
