Goji Berry and Bull Penis Tonic Soup
A Sichuan-style soup, Qi Bian Zhuang Yang Tang, slowly stews yellow ox penis with fat hen, goji berries, and cistanche until the broth is rich and the meat tender; it is traditionally believed to nourish the liver and kidneys.

Preparing ingredients
Soak the bull penis in hot water until expanded, split it lengthwise into two pieces, scrape clean, and rinse in cold water for 30 minutes. Pick out any impurities from the goji berries. Wash the cistanche, moisten it thoroughly with wine to taste, steam for 2 hours, remove, rinse clean, and slice for later use.
Initial stewing
Add water to a clay pot, place the bull penis and bring to a boil, skim off the foam, then add ginger, Sichuan peppercorns, cooking wine, and chicken. Bring to a rolling boil over high heat, then reduce to low heat and simmer. Turn once every hour. When the bull penis is about 60% done, strain out the ginger and Sichuan peppercorns from the broth using a clean cheesecloth.
Re-stewing
Return to high heat and bring to a boil. Add the goji berries and cistanche wrapped in a cheesecloth bag, reduce to gentle heat and simmer until the bull penis is about 80% done. Remove the bull penis, cut into 3 cm strips, return to the clay pot, and stew until tender.
Seasoning
Remove the chicken for other uses, take out the herb bag, and season with MSG, salt, and lard. Serve.
