Ingredients

Fresh shrimp meat (washed and pounded into paste) 400 g
Pork fat (washed and pounded into paste) 400 g
Sesame seeds (washed and dried) 50 g
Toast (trimmed into slices about 3.3 cm in diameter and 0.6 cm thick, 24 slices total) 100 g
Eggs (use the egg whites) 50 g
Lettuce (washed and tossed with seasonings) 25 g
Cooking oil 500 g
Bean starch (used to make egg white starch paste and dry starch) 50 g
Salt 5 g
MSG 0.5 g
White pepper (the original text reads 'pepper powder zhi grams', inferred to be '2 grams') 2 g
Sugar 5 g
Sesame oil 5 g
Vinegar 5 g

Instructions

1

Make the filling paste

Wash and pound the fresh shrimp meat and pork fat separately into a paste, add the egg whites, salt, MSG, white pepper, and dry bean starch, and mix well into a filling paste.

2

Prepare the supporting ingredients

Wash and dry the sesame seeds. Trim the toast into slices about 3.3 cm in diameter and 0.6 cm thick, 24 slices total. Mix the egg whites with dry bean starch to make egg white starch paste. Wash the lettuce and toss with the sugar, sesame oil, and vinegar; set aside.

3

Shape the pieces

Lay the toast slices flat on the cutting board, first brush with the egg white starch paste, then spread the filling paste on top, and finally sprinkle with the sesame seeds (press lightly with the hand).

4

Deep-fry

Place a wok over the heat, add the cooking oil and heat to about 150 °C. Drop in the toast pieces sesame-side down and fry until golden brown, then remove.

5

Plate

Arrange on one end of a plate and place the dressed lettuce on the other end. Serve.
