Golden and Silver Scrambled Eggs
A Zhejiang-style dish made by scrambling regular eggs with preserved (century) eggs.

Step 1
Steam the preserved eggs in their shells vigorously for 5 minutes. Remove the shells, cut the eggs into small slices, and briefly stir-fry with a little lard.

Add MSG, salt, white pepper, and lard to the fresh eggs and whisk until evenly combined, then fold in the sliced preserved eggs.

Heat a wok over high heat with lard, pour in the egg mixture, then use low heat to push and swirl the egg around the sides of the wok while adding more oil as needed, cooking only until just set.
