Green Beans with Pork Strips
A comforting home-style stir-fry where tender pork strips meet crisp green beans in a savory sauce. Quick to make and full of flavor.
Story
This classic Chinese dish comes together in under 30 minutes. The key is blanching the green beans first so they cook through evenly, then giving them a quick toss in the hot wok for that slightly charred flavor.

Instructions
Prepare the ingredients
Cut the pork into thin strips. Trim the green beans and cut into 5cm lengths. Slice the garlic thinly. Mix the pork with 1 tablespoon soy sauce, cornstarch, and a pinch of salt. Let it sit for 10 minutes.
Blanch the green beans
Bring a pot of water to a rolling boil. Add the green beans and cook for about 4 minutes until they turn bright green and are just tender. Drain and set aside.
Stir-fry the pork
Heat 2 tablespoons of oil in a wok over high heat. Add the marinated pork and stir-fry for 2-3 minutes until browned. Remove and set aside.
Combine and finish
Add the remaining oil to the wok. Throw in the sliced garlic and cook for 30 seconds until fragrant. Add the blanched green beans and stir-fry for 2 minutes. Return the pork to the wok, add the remaining soy sauce, salt, and sugar. Toss everything together for another minute until well combined. Serve hot.
