Grilled Trout

Trout is marinated in soy sauce and ketchup along with other seasonings, then grilled for a distinctive flavor.

Grilled Trout

Ingredients

whole dressed trout 6
soy sauce 2/3 cup
ketchup 1/2 cup
lemon juice 2 tbsp
vegetable oil 2 tbsp
dried rosemary, crushed 1 tsp
lemon wedges (optional) to taste

Instructions

Step 1

Place the trout in a single layer in a plastic bag or a glass baking dish. Mix the soy sauce, ketchup, lemon juice, oil, and rosemary; pour two-thirds of the marinade into the bag or dish. Cover (or seal the bag) and let stand for 1 hour, turning once halfway through. Reserve the remaining marinade for basting.

Discard the marinade from the fish. Place the trout in a single layer in an oiled hinged metal grilling basket. Close the basket and grill over medium heat for 8-10 minutes, until the underside of the fish is browned. Turn and brush with the reserved marinade; grill for another 5-7 minutes, until the flesh flakes easily when tested with a fork. Serve with lemon wedges if desired.
