Ground Beef Clay Pot Rice

A fragrant claypot rice featuring rice cooked in a clay pot, topped with marinated ground beef, and finished by drizzling with oil and baking until golden.

Ground Beef Clay Pot Rice

Ingredients

White rice (lightly washed, soaked for 1 hour then drained) 155g
Ground beef (marinate for 30 minutes) 120g
Cilantro, chopped 2
Chopped green onions 1
Egg 1
Tapioca starch 1/2 tsp
Salt (marinade) 1/2 tsp
Sugar (marinade) 1/4 tsp
Chicken powder (marinade) 1/4 tsp
Water (marinade) 30 ml
Water (for cooking rice) 240g
Oil 1 tsp
Soy sauce 1 tsp

Instructions

Prepare Rice

Lightly wash the white rice, soak for 1 hour then drain.

Marinate Beef

Put the ground beef in a bowl, add the marinade ingredients (tapioca starch, 1/2 egg, salt, sugar, chicken powder, 30ml water) and marinate for 30 minutes.

Cook Rice

Put the soaked rice into a clay pot, add water, cover and bring to a boil over high heat (if water overflows, lift or half-open the lid).

Add Beef Layer

When the water in the clay pot is completely evaporated, turn to low heat, uncover and evenly spread the marinated beef on top.

Braise Rice

Drizzle oil along the edge of the clay pot, cover and continue cooking over low heat for 5 minutes, turn off the heat and let it rest for 15 minutes, then uncover, drizzle with soy sauce, sprinkle with chopped cilantro and chopped green onions before serving.
