Guaiwei Scallops (Strange-Flavor Scallops)

Ingredients

Fresh scallops (choose large ones and slice each into two pieces) 200 g
Ginger (smashed) 15 g
Scallions (cut into segments) 15 g
Garlic (minced into paste) 15 g
Salt 2 g
Soy sauce 15 g
Sugar 25 g
Vinegar 10 g
Sesame paste 40 g
Sesame seeds (toasted) 15 g
Sichuan pepper powder 1 g
MSG 1.5 g
Chili oil 15 g
Sesame oil 15 g

Preparing the Ingredients

Select large scallops and slice each into two pieces; smash the ginger; cut the scallions into segments; mince the garlic into a paste; toast the sesame seeds.

Blanching the Scallops

Bring water to a boil in a pot with the ginger and scallions to release their flavor; remove the ginger and scallions, add the scallops and cook for 2–3 minutes, then lift out and place in a bowl; add 1 g salt and 10 g sesame oil and mix well.

Making the Guaiwei Sauce and Mixing

Combine 1 g salt, soy sauce, sugar, sesame paste, vinegar, garlic paste, chili oil, Sichuan pepper powder, MSG, 15 g sesame oil, and sesame seeds in a bowl to make the Guaiwei (strange-flavor) sauce; pour it over the scallops in the bowl, toss to coat evenly, and arrange on a serving plate.
