Stir-Fried Lamb with Young Ginger

A quick stir-fry of young ginger and fresh lamb. Young ginger cuts the gaminess and lifts the aroma, while lamb warms the yang and dispels cold.

Stir-Fried Lamb with Young Ginger

Ingredients

fresh lamb (shredded) 200 g
young ginger (shredded) 100 g
green pepper (stemmed and shredded) 1
red pepper (stemmed and shredded) 1
cooking wine 1 tsp
salt to taste
vinegar 1 tsp
chicken essence 1 tsp
scallion (white part, shredded) 1

Instructions

Shred the aromatics

Cut the lamb, young ginger, green and red peppers (stemmed), and scallion whites into thin shreds.

Marinate

Marinate the lamb briefly with cooking wine and a pinch of salt.

Bloom the ginger

Heat oil in a wok until about 80% hot, then add the ginger shreds and stir-fry until fragrant.

Stir-fry together

Add the lamb shreds, pepper shreds, and scallion shreds all at once and stir-fry. Season with a little cooking wine, salt, and chicken essence. Just before removing from the heat, drizzle in a few drops of vinegar and serve.
