Crispy Fried Pork Ribs

A traditional Zhejiang dish: pork ribs coated in egg and starch, fried until golden and crispy, served with a sweet-and-sour dipping sauce.

Crispy Fried Pork Ribs

Ingredients

pork ribs (first cut into strips, then chopped into 3 cm pieces) 400 g
egg 1
fine salt 2.5 tsp
minced garlic 1 tsp
chili peppers (washed, minced) 3
dry starch (for coating) 0.5 tbsp
wet starch (for mixing) 0.5 tbsp
sweet and sour sauce 3 tbsp
peanut oil (for frying) 1500 g

Instructions

Marinate the ribs

Wash the ribs, cut them into strips first, then chop into 3 cm pieces. Place in a bowl, add fine salt and wet starch, mix well, then add beaten egg and mix evenly, then coat with dry starch.

Prepare side ingredients

Peel the garlic and mince it; wash the chili peppers and mince them.

Fry the ribs

Place a wok over high heat, heat it and add peanut oil, heat to 70% of its smoking point, add the ribs and fry until golden brown, remove, drain excess oil and place on a serving plate.

Make the dipping sauce

Return the wok to the heat, add minced garlic, minced chili peppers and sweet and sour sauce, stir in wet starch until smooth, divide into two small plates and serve for dipping.
