Ham Beef Rolls

Ingredients

Beef (washed and cut into 3 cm long, 2 cm wide pieces)
Ham (cut into shreds)
Shiitake mushrooms (cut into shreds)
Cucumber slices (cut into shreds) 30 g
Salt 15 g
MSG (monosodium glutamate) 20 g
Cooking wine 25 g
White sugar 5 g
Ethyl maltol 3 g
Beef essence 10 g
Yeast extract 6 g
Ginger 30 g
Scallions 25 g
Chili oil 4 g
White pepper powder 5 g
Tenderizer (meat softening powder) 50 g
Egg batter (for coating)
Sesame seeds (for adhesion)

Step 1

Wash the beef and cut into 3 cm long, 2 cm wide pieces. Marinate with cooking wine, MSG, white sugar, salt, beef essence, yeast extract, ethyl maltol, ginger, chili powder, white pepper powder, tenderizer, and scallions until well-flavored.

Cut the ham, shiitake mushrooms, and cucumber slices into shreds. Mix with salt, MSG, and chicken essence; set aside.

Lay out the marinated beef slices and roll each one with ham, cucumber, and shiitake shreds to form rolls. Coat with egg batter, adhere sesame seeds, then thread onto skewers. Deep-fry in oil at 150 °C until cooked through and crispy. Sprinkle with chili seasoning before serving. Each skewer holds 4 rolls.
