Ingredients

Bittersweet chocolate (melted in a double boiler) 100 g
Butter (melted in a double boiler) 45 g
Caster sugar 60 g
Whole eggs 1.5
Vanilla powder 2.5 g
Cake flour (sifted) 100 g
Cocoa powder (sifted) 12 g
Baking powder (sifted) 1.5 g
Salt 3 g
Powdered sugar (for decoration) 90 g

Instructions

1

Step 1

Melt the bittersweet chocolate and butter in a double boiler, stirring constantly until smooth, then remove from heat.

2

Step 2

Add the caster sugar and stir until dissolved.

3

Step 3

Add the whole eggs and mix thoroughly until well combined.

4

Step 4

Place the sifted cake flour, cocoa powder, vanilla powder, baking powder, and salt into a bowl and stir until evenly mixed. Gradually add the chocolate mixture in batches to form a soft dough. Wrap and refrigerate for 1 hour, until the dough is firm and holds its shape.

5

Step 5

Use an ice cream scoop or a small teaspoon to portion the dough into balls, then roll each into a round.

6

Step 6

Roll the dough balls in powdered sugar so they are coated in a thick layer. Tap gently against the side of the bowl to shake off excess sugar, then arrange on a baking sheet about 4 cm apart.

7

Step 7

Bake in a small oven at 160°C with top and bottom heat for 10-15 minutes. When the top feels slightly firm to the touch, they are done.
