Hawthorn Soft Candy

A digestion-aiding soft candy made by simmering hawthorn to extract its juice, concentrating the liquid, cooking it with sugar, then cooling and cutting the mixture into blocks.

Hawthorn Soft Candy

Ingredients

Fresh hawthorn (washed, chopped) 500 g
White granulated sugar (used in stages: for dusting the pan and cooking) 500 g

Step 1

Wash the fresh hawthorn, chop it, and place it in a pot. Add an appropriate amount of water and decoct. Strain off the liquid once every 20 minutes, add more water, and decoct again. Repeat this process 3 times total. Combine the extracted liquids, then continue to simmer over low heat until the mixture thickens to a sticky consistency. Add the white sugar and stir until well combined. When the sugar has melted and the mixture turns transparent, turn off the heat.

Step 2

While still hot, pour the thickened hawthorn syrup onto a large enamel plate that has been dusted with a layer of white sugar. Allow to cool, then sprinkle another layer of white sugar over the top of the hawthorn candy. Cut into approximately 150 pieces.
