Ingredients

Heart-shaped vanilla sponge cake layer 1 slice (about 20 cm diameter, 1 cm thick)
Strawberries (washed, hulled, and sliced thin) 150 g
Gelatin powder 10 g
Boiling water 90 g
Egg 1
Granulated sugar 50 g
Red food coloring a pinch
Cherry brandy 20 g
Whipped heavy cream 250 g
Strawberry jelly 180 g

Instructions

1

Prepare the cake base

Place the vanilla sponge cake layer at the bottom of the cake mold and set aside.

2

Prepare the strawberries

Wash the strawberries, hull them, and slice them thinly with a small knife. Set aside.

3

Make the cream mixture

Place the gelatin powder in a mixing bowl, pour in the boiling water, and whisk until fully dissolved. In a separate mixing bowl, combine the egg and sugar and whisk into a thick, foamy mixture. Add the dissolved gelatin and mix well, then stir in a tiny amount of red food coloring and the cherry brandy until evenly blended. Finally, fold in most of the whipped cream, pour the mixture into the prepared mold, scatter the strawberry slices on top, tap gently to level, and refrigerate to chill.

4

Set

Once the mousse has set, remove from the refrigerator and very carefully pour the strawberry jelly over the top. Return to the refrigerator to chill until completely firm. Remove, briefly warm the outside of the mold to loosen, unmold, and transfer to a cake board.

5

Decorate

Spoon a little whipped cream into a piping bag, snip the tip, and pipe lettering on the top of the cake for decoration. Pipe a shell border around the bottom edge to finish.
