Prepare the Fish
Rinse the yellow croakers thoroughly under cold water and pat them completely dry with paper towels. Make diagonal slits on both sides of each fish—this helps them cook faster and absorb seasoning.
Infuse the Oil
Heat the oil in a wok or frying pan over medium heat. Add the ginger slices and fry them for about a minute until fragrant. Remove the ginger slices and discard them; this leaves the oil flavored to prevent the fish from sticking and reduces fishiness.
Fry the Fish
Carefully place the fish into the hot oil. Fry for about 3-4 minutes on one side until the skin is golden and crispy, then gently flip and cook the other side until golden brown. Transfer the fish to a serving plate.
