Ingredients

Dried mung bean sheets 100g
Garlic chives 150g
Eggs 2 large
Fresh ginger 1 small piece
Light soy sauce 1 tbsp
Cooking oil 2 tbsp
Salt to taste

Slice the dried mung bean sheets into thin strips. Cut the garlic chives into inch-long segments. Peel the ginger and slice it into thin matchsticks.

Heat a splash of oil in a wok or pan over medium heat. Beat the eggs and pour them in, scrambling until just set. Remove the eggs from the pan and set aside.
