Homemade Milk Tea

Story

This classic milk tea uses a simple caramelization technique to build depth of flavor. The sugar is melted until golden, then combined with milk and tea for a smooth, satisfying drink.

Ingredients

granulated sugar 2 tablespoons
whole milk 2 cups
black tea leaves or tea bags 2 teaspoons loose leaf or 2 bags
water 1/2 cup

Caramelize the sugar

Add sugar to a small saucepan over medium-low heat. Let it melt undisturbed until it turns a deep amber color, about 3-4 minutes. Watch carefully to prevent burning.

Add milk and heat

Carefully pour in the milk—it will sizzle initially. Reduce heat to low and stir gently until the mixture is hot but not boiling. Small bubbles around the edges are perfect.

Steep the tea

Add the black tea directly to the milk mixture. Remove from heat, cover, and let steep for 5 minutes for bold flavor, or 3 minutes for a lighter taste.

Strain and serve

Strain the tea through a fine mesh sieve into two glasses. Serve warm as is, or let cool and pour over ice for a refreshing cold version.
