Honey Glazed Char Siu

Honey Glazed Char Siu

Ingredients

Skinless semi-fat lean pork (cut into strips 33 cm long, 3 cm wide, 1.5 cm thick) 500g
Fine salt 7.5g
White sugar 32g
Soybean paste 7.5g
Fenjiu (Chinese sorghum wine) 15g
Dark soy sauce 5g
Light soy sauce 10g
Syrup (maltose) 50g

Step 1

Cut the pork into strips 33 cm long, 3 cm wide, and 1.5 cm thick. Place in a clay pot, add fine salt, white sugar, dark soy sauce, light soy sauce, soybean paste, and Fenjiu, and mix well. Marinate for about 45 minutes, then thread the pork strips onto a char siu rack in a row.

Step 2

Place the pork in the oven and roast over medium heat for about 30 minutes (turning the strips over during roasting). It is done when oil drips from the lean portions. Remove and let rest for about 3 minutes, brush evenly with syrup, then return to the oven and roast for another 2 minutes until done.
