Honey Glazed Gourd
Deep-fried pork fat strips coated in batter, shaped like small gourds, glazed with honey syrup, and finished with shredded green and red candied fruit.
Ingredients
Pork back fat (cut into strips)
300 g
Honey
approx 200 g
Green and red candied shreds
15 g each
Eggs

Dry starch (for coating pork fat)
to taste
All-purpose flour (for making batter)
to taste
Peanut oil (for deep frying)
to taste
White sugar (for sprinkling when serving)

Instructions

Step 1
Cut the pork back fat into strips, coat with dry starch, and roll into round strips.

Mix the flour with warm water to form a dough, scald with boiling water then drain, and stir into a dough. Repeat the scalding and draining process 3 times, then crack in the eggs and mix into a batter.

Dip the pork fat strips evenly in the egg batter, deep fry in peanut oil, and remove when they turn gourd-shaped.

Simmer the honey until it darkens, add the gourd-shaped fried strips, coat evenly with honey, plate, sprinkle with white sugar and green and red candied shreds, and serve.
