Ingredients
Instructions
Step 1
Wash the whole piece of upper lean ham. Place in a soup pot and simmer until about 80% tender, then remove. Take out the bone, press the meat flat with a bowl, cool it down, then chill briefly in the refrigerator. Remove and cut into thick slices.
Step 2
Place the thick ham slices in a clay pot and simmer in chicken broth to draw out the saltiness.
Step 3
If the flavor is still too salty, drain the original broth, add fresh chicken broth and simmer again to further remove saltiness, until the thick ham slices are fully desalinated, then remove them.
Step 4
Transfer to another pot, add water and white sugar, and simmer over low heat for 1 hour until the sauce is thick and concentrated and the color is glossy and bright; it is then done.
