Honey Pear Filling

Fry pears in honey until soft and tender; serve with crème anglaise.

Honey Pear Filling

Ingredients

Pear (peeled, cored, cut into quarters and sliced 2cm thick) to taste
Honey to taste
Egg 2
Egg yolk 2
Powdered sugar to taste
Potato starch to taste
Heavy cream to taste

Prepare the pear

Peel the pear, cut into quarters and remove the core, then slice into 2 cm thick pieces.

Pan-fry the pear

Heat the honey in a pan, and once it begins to bubble, add the pear slices.

Cook the pear

Lower the heat when the honey starts to change color, and continuously stir-fry until the pear becomes soft and tender. Remove and place on a rack to drain.

Make the custard

Beat the eggs and egg yolks together in a bowl, add the powdered sugar, and whisk until pale. Add the potato starch and heavy cream, mix well, then sift the mixture.

Drain

Remove the pear and place on a wire rack to drain off any excess moisture.
