Hot and Sour Chicken Cubes

Ingredients

Chicken thigh meat (boneless, scored and diced) 250 g
Bell pepper (cut into chunks) 50 g
Dried chili 2 g
Salt 2 g
Soy sauce 3 g
Vinegar 4 g
MSG (monosodium glutamate) 2 g
Cooking wine 3 g
Cornstarch (for coating) 10 g
Egg white 20 g
Cooking oil (for stir-frying chicken) 80 g
Sesame oil (used before plating) a pinch

Coating and Searing Chicken

Score and dice the boneless chicken thigh meat, then coat it with egg white and cornstarch. Cut the bell pepper into chunks. Heat oil in a wok, add the chicken cubes and stir to separate them, then remove and drain the oil.

Stir-frying and Plating

Leave a thin layer of oil in the wok, add dried chilies and stir-fry until fragrant, then add the chicken cubes and seasonings and stir-fry together. Drizzle in a cornstarch slurry, finishing oil, and sesame oil before plating.
