Hot and Sour Shredded Potatoes

Peel the potato

Cut into strips, rinse repeatedly with water to remove surface starch, then soak in clean water and set aside

Cut celery into strips, rinse the dried chili pepper strips

Pour oil into the pot and heat it up, stir-fry the chili pepper strips over low heat until fragrant

Add ginger and scallion and sauté until fragrant
