Red Date Layered Cake
A soft, sweet Beijing-style steamed cake made with layers of glutinous rice, red kidney beans, and dates.
Story
This layered cake combines the chewy texture of glutinous rice with the earthy sweetness of red kidney beans and the rich flavor of red and candied dates. Steamed until tender and then sliced into neat pieces, it makes for a satisfying snack or dessert that is both visually appealing and delicious.

Step 1
Main ingredients: glutinous rice, red dates, candied dates, red kidney beans
Step 2
Soak the glutinous rice in advance for more than 4 hours, until it can be easily crushed by hand.
Step 3
Soak the red kidney beans in advance for 12 hours.
Step 4
Remove the pits from the red dates and candied dates respectively, and cut them in half.
Step 5
Arrange the cut red dates at the bottom of the container (I used a lunch box, and wrapped a layer of tin foil for easy removal).
Step 6
After arranging the red dates, spread a layer of soaked glutinous rice.
Step 7
Continue to spread a layer of soaked kidney beans on top of the glutinous rice.
Step 8
Spread another layer of glutinous rice.
Step 9
Finally, arrange the candied dates evenly on top of the glutinous rice.
Step 10
Add clear water (the water level should be level with the glutinous rice).
Step 11
Place in a pressure cooker; after steam builds up, reduce to low heat and pressure for 1 hour, then turn off the heat. (I used a pressure cooker; a steamer requires at least 2 hours.)
Step 12
Remove.
Step 13
Let cool, then cut into pieces and serve.
