Hot and Sour Soup

A savory soup made by simmering tofu, bamboo shoots, carrots, and other ingredients, then thickened and finished with white pepper, vinegar, and sesame oil.

Hot and Sour Soup

Ingredients

firm tofu (cut into thin strips) 1
bamboo shoots (shredded) 1/2
carrot (shredded) 1/4
enoki mushrooms (washed, trimmed at the base and separated) 1 handful
wood ear mushrooms (shredded) 2 slices
vegetarian ham (shredded) 50 g
water 4 cup
salt (seasoning A) 1 tsp
cornstarch (seasoning B, mixed with water to make a slurry) 2 tsp
water (seasoning B, mixed with cornstarch to make a slurry) 2 tsp
white pepper (seasoning C) 1/2 tsp
sesame oil (seasoning C) 1/2 tsp
vinegar (seasoning C) 1 tsp

Instructions

Step 1

Cut tofu into thin strips; shred bamboo shoots, carrot, wood ear mushrooms, and vegetarian ham separately. Wash enoki mushrooms, trim the root ends, and set aside.

Step 2

Bring a deep pot of 4 cups of water to a rolling boil. Add all ingredients from step 1 except tofu, along with salt, and cook until it returns to a boil. Stir in seasoning B (slurry) to thicken, then turn off the heat. Add tofu strips and stir to combine. Add seasoning C just before serving.
