Hot and Sour Soup
A hot and sour soup made by simmering silken tofu, wood ear mushrooms, and pickled bamboo shoots, then seasoning to taste.
Ingredients
Tender tofu (rinsed and cut into strips)
100 g
Black fungus (rehydrated, washed, and torn into small pieces)
to taste
Pickled cabbage (chopped)
to taste
Pickled bamboo shoots (cut into strips)
to taste
Wild pickled peppers
to taste
Cilantro
to taste
Salt, pepper, cooking oil, aged vinegar, chili oil, sesame oil
to taste

Step 1
Rinse the tender tofu and cut into strips; rehydrate the black fungus, wash, and tear into small pieces; chop the pickled cabbage; cut the pickled bamboo shoots into strips.

Heat oil in a pot, add water and bring to a boil, then add the tender tofu, black fungus, pickled cabbage, pickled bamboo shoots, and wild pickled peppers and cook together for 5 minutes.

Season with salt, pepper, aged vinegar, chili oil, and sesame oil, mix well, transfer to a bowl, and garnish with cilantro before serving.
