Hot and Spicy Diced Chicken

Ingredients

Boneless chicken thigh meat (cross-scored then diced) 250 g
Bell pepper (cut into chunks) 50 g
Dried red chili peppers 2 g
Salt 2 g
Soy sauce 3 g
Vinegar 4 g
MSG (monosodium glutamate) 2 g
Cooking wine 3 g
Cornstarch (for coating) 10 g
Egg white (for coating) 20 g
Cooking oil (for stir-frying chicken) 80 g
Sesame oil (drizzled before serving) a pinch

Step 1

Debone the chicken thigh meat, cross-score, then dice it. Mix with cornstarch and egg white to coat. Cut the bell pepper into chunks. Heat oil in a wok until hot, add the diced chicken and stir-fry briefly to separate the pieces, then remove and drain off the oil.

Leave a little oil in the wok, add the dried red chili peppers and stir-fry until fragrant. Return the chicken to the wok along with the seasonings and toss quickly to combine. Finish by drizzling in a cornstarch-water slurry, clear oil, and sesame oil, then serve.
