white radish 1 large (about 400g)
white vinegar 3 tablespoons
granulated sugar 2 tablespoons
fine salt 1 teaspoon plus more for soaking
sesame oil 1 teaspoon (optional)

Prepare the radish

Peel the white radish thoroughly. Using a mandoline or sharp knife, cut it into very thin, uniform threads about 5 centimeters long. Work quickly to keep them crisp.

Remove bitterness

Place the shredded radish in a bowl and cover with cold water. Add a generous pinch of salt and let it soak for 5 minutes. This draws out any bitter compounds and ensures a clean, sweet flavor. Drain well and pat completely dry with a clean kitchen towel.

In a large bowl, whisk together the white vinegar, sugar, and a pinch of salt until the sugar dissolves completely. Add the dried radish threads and toss gently to coat evenly. The dressing should lightly coat each strand without making it soggy.
