fresh mushrooms (sliced) 1/4 lb.
all-purpose flour 2 tbsp.
milk 1 c.
mild pimiento cheese (sliced) 1 lb.

Instructions

1

Prepare the Cauliflower

Cut off the core of the cauliflower and place the florets in a large pot of water. Bring the water to a boil and cook for about 3 to 5 minutes, then drain.

2

Sauté the Vegetables

Melt the butter in a skillet and sauté the green pepper slices and mushroom slices until tender.

3

Preheat the Oven

Preheat the oven to 350°F.

4

Make the Cream Sauce

Remove the skillet from the heat and sprinkle in the flour in batches, stirring quickly. Slowly add the milk, stirring constantly. Return to the heat and stir until the mixture thickens.

5

Assemble and Bake

Place the cauliflower in a baking dish. Layer the cheese slices over the cauliflower, then pour the creamy pepper and mushroom sauce on top. Bake for 20 minutes.
