Jar-Braised Chicken
Chicken pieces are braised in a pot with mushrooms and pork, yielding a dish with a subtle reddish hue, rich, aromatic flavor, and tender, finely textured chicken.

Preparing the Ingredients
Wash the chicken breast and cut it into 2 cm long, 1 cm wide pieces; soak the mushrooms, remove the stems, and wash them; cut the pork into 7 cm long, 1 cm wide, 5 mm thick slices. Set aside.
Preparing the Scallion and Ginger
Peel and wash the scallion, then cut it into 2 cm long segments; wash and peel the ginger, then slice it.
Frying the Chicken Pieces
Heat a wok over high heat, pour in the soybean oil, and heat until about 80% hot. Add the chicken pieces and briefly fry, then remove and drain. Pour the remaining oil into an oil jar.
Braising
Place a small amount of soybean oil in the wok. When it is about 50% hot, add the scallion segments and ginger slices and stir-fry briefly. Add 25 g of cooking wine, then remove and discard the scallion and ginger. Add the chicken pieces along with 75 g of cooking wine. When the liquid has nearly evaporated, add salt, soy sauce, white sugar, ground pepper, chicken broth, and MSG, and simmer for 5 minutes. Divide the chicken and broth into small jars, add the mushrooms and pork, cover, and braise over low heat for 2 hours. Sprinkle with sesame oil and ground sesame before serving.
