Kimiye's Unfruitcake

A rich cake made by mixing a generous amount of candied fruits and nuts with a small amount of batter.

Kimiye's Unfruitcake

Ingredients

all-purpose flour 2 cup
baking powder 2 tsp
salt ½ tsp
dried pineapple chunks 1 pound
dried cherries 1 pound
pitted dates (coarsely chopped) 1¼ pound
eggs 4
sugar 1 cup
mixed raw nuts (unsalted, coarsely chopped) 2 pounds (about 8 cups)

Prepare the Oven

Preheat the oven to 275°F. Grease two 9-inch springform pans and line the bottoms and sides with parchment paper.

Mix the Flour

Sift the flour, baking powder, and salt into a large mixing bowl. Add the pineapple, cherries, and dates and mix by hand, making sure each piece of fruit is coated with flour.

Mix the Egg Mixture

In a small bowl, beat the eggs until the yolks and whites are completely combined. Add the sugar and continue beating until the mixture turns pale yellow, about 2 minutes. Pour the egg mixture over the fruit and stir well by hand. Fold in the nuts.

Bake

Press the mixture firmly into the prepared pans. Bake for 1 to 1¼ hours, until the surface is golden brown.

Cool

Let the cake cool in the pans for 15 to 30 minutes, then remove and invert onto a wire rack. Peel off the parchment paper and cool completely. The cake can be served immediately.
