Ingredients

Sea bass (cut off head and tail, split the middle back section into 2 large pieces, each cut diagonally into 6 small pieces) 1000 g
Shiitake mushrooms (soak until soft, cut each in half to make 12 slices) 6
Ham (sliced) 300 g
Bamboo shoot slices (sliced) 150 g
Sliced ginger 20 g
Refined salt (for marinating fish and thickening sauce) 8 g
Cooking wine (for marinating fish) 25 g
White pepper powder (for marinating fish) 2 g
MSG (for marinating fish and thickening sauce) 2 g
Scallion segments 15 g
Sesame oil (for thickening sauce) 15 g
Starch (for thickening sauce) to taste

Instructions

Prepare the fish

Cut off the sea bass's head and tail, split the middle back section into 2 large pieces, cut each piece diagonally into 6 small pieces, then marinate with refined salt, cooking wine, white pepper powder and MSG. Soak shiitake mushrooms until soft and cut each in half to make 12 slices. Arrange the fish head and tail separately on a plate.

Assemble and arrange

Take one slice each of fish meat, shiitake mushroom, ham and bamboo shoot to form a group, make 12 groups in total. Arrange them in a steamer and steam for 8 minutes.

Make sauce and drizzle

Mix refined salt, MSG, water, sesame oil and starch to make a thick sauce, drizzle over the steamed fish and serve.
