Korean Barbecued Beef Short Ribs (Kalbi)

Korean-style grilled beef short ribs, marinated with kiwi, soy sauce, and pear juice, then barbecued. The meat is tender with a distinctive flavor.

Korean Barbecued Beef Short Ribs (Kalbi)

Ingredients

Korean-style beef short ribs 4 pounds
kiwis (peeled and pureed in blender) 2
light brown sugar 2 tablespoons
soy sauce ½ cup
garlic (minced (about 2 tablespoons)) 6 cloves
fresh ginger (grated (about 1 tablespoon)) 1-inch piece
toasted sesame seeds 2 tablespoons
toasted sesame oil 2 tablespoons
honey 1 tablespoon
Korean red pepper powder 1 tablespoon
ground black pepper ¼ teaspoon
lemon-lime soda 20-ounce bottle
Vegetable oil (for brushing the grill)

Massage the ribs

Use your hands to massage the kiwi puree into the short ribs. Sprinkle the sugar evenly over each piece and set aside while you prepare the marinade.

Marinate

In a medium bowl, combine the soy sauce, garlic, ginger, sesame seeds, sesame oil, honey, chili powder, pepper, and soda. Arrange the ribs in a single layer in a wide shallow pan and pour the marinade over them, turning to coat. Cover with plastic wrap and refrigerate, turning occasionally, for at least 1 hour, preferably 12 hours.

Prepare the grill

Prepare a medium-hot charcoal fire (you should be able to hold your hand over the grill for no more than 3 or 4 seconds), with the grill rack 4 to 6 inches above the coals; or preheat a gas grill to medium. While the grill heats, drain the ribs from the marinade. Reserve the marinade for basting if desired.

Grill

Brush the grill with oil and grill the ribs in batches until caramelized and slightly charred at the edges, 6 to 8 minutes per side. Baste with the reserved marinade during the first 10 minutes if desired.

Serve

Serve with freshly steamed short-grain rice and kimchi (CABBAGE KIMCHI, see page 131).
