Story

These beef rolls are perfect for weeknight dinners or casual gatherings. The apple puree not only adds sweetness but also helps tenderize the meat. Serve over rice or with fresh vegetables.

Ingredients

flank steak, thinly sliced against the grain 1 lb
apples, cored and chopped (skin on) 2 medium
Korean BBQ marinade or bulgogi sauce 3 tablespoons
soy sauce 2 tablespoons
garlic, minced 3 cloves
ginger, grated 1 tablespoon
sesame oil 1 tablespoon
brown sugar 1 tablespoon
vegetable oil for cooking 2 tablespoons
sesame seeds and green onions for garnish as needed

Instructions

Make the apple glaze

Place the chopped apples in a food processor and blend until you have a smooth puree. Transfer to a bowl and mix in the Korean BBQ marinade, soy sauce, garlic, ginger, sesame oil, and brown sugar until well combined.

Marinate the beef

Lay the beef slices flat in a shallow dish. Pour half of the apple glaze over the meat, turning to coat evenly. Let it marinate for at least 20 minutes at room temperature, or refrigerate for up to 2 hours for deeper flavor.

Form the rolls

Lay a marinated beef slice flat. Spoon a small amount of the remaining glaze along the center. Roll the beef tightly around the sauce, securing with a toothpick if needed. Repeat with remaining slices.

Cook the beef rolls

Heat vegetable oil in a large skillet over medium-high heat. Place the beef rolls seam-side down and cook for 2-3 minutes until the bottom is caramelized. Turn carefully and cook another 2-3 minutes until all sides are browned and the beef is cooked through.

Serve

Remove toothpicks if used. Garnish with sesame seeds and sliced green onions. Serve immediately with steamed rice and pickled vegetables.
