Lamb's Quarter Quiche
A savory egg custard quiche made with wild lamb'squarter, with a mild flavor reminiscent of spinach.

medium onion (chopped)

vegetable oil

chopped lamb’s-quarter (tender new leaves)
4 cups
eggs

evaporated milk (or 12/3 cups milk)
12 ounces
salt
1/2 teaspoon
pepper
1/2 teaspoon
shredded cheddar cheese (divided)

unbaked pie pastry

Step 1
In a skillet, sauté the onion in oil until soft. Add the lamb's quarter; stir until wilted. Cover and remove from heat.

In a mixing bowl, beat the eggs and milk. Stir in the salt, pepper, 1 cup of cheese, and the lamb's quarter mixture. Pour into the pie shell. Top with the remaining cheese.

Bake at 400°F for 10 minutes. Reduce heat to 350°F; bake for another 30 minutes, until a knife inserted near the center comes out clean. Let rest for 5–10 minutes before cutting. Yields 6–8 servings.
