Lotus Paste Sesame Balls

Ingredients

glutinous rice flour 300 g
water 150 g
sugar 55 g
wheat starch 40 g
boiling water 30 g
lard 55 g
lotus paste 300 g
raw sesame seeds 300 g

Instructions

1

Step 1

Combine all Group A ingredients and knead until smooth; pour boiling water into the wheat starch to gelatinize it, then add the mixture to the Group A ingredients and knead together. Finally, add the lard and knead until the surface is smooth to form the glutinous rice wrapper dough.

Step 2

Divide the glutinous rice wrapper dough from Step 1 into small portions of approximately 30g each, flatten each portion into a round disc by hand, then wrap roughly 20g of lotus paste filling inside and roll into a ball. Repeat this process until all ingredients are used up.

3

Step 3

Moisten the surface of the lotus paste balls from Step 2 with water, roll them evenly in the raw sesame seeds, then squeeze gently to secure the coating and set aside.

4

Step 4

Heat oil in a wok to 150°C, add the sesame-coated balls from Step 3, fry until the surface turns golden brown, then remove and drain excess oil.
