Luohan Stuffed Squash

This dish is made by stuffing a filling of shredded dried shiitake, wood ear mushroom, straw mushroom and other ingredients into fuzzy melon (jie gua), then cooking on high in the microwave.

Luohan Stuffed Squash

Ingredients

Summer squash (medium, peeled, deseeded, and hollowed out) 2
Shiitake mushrooms (soaked until soft and julienned) 2
Wood ear fungus (soaked until soft and julienned) 5 g
Straw mushrooms (julienned) 5
Fried gluten (julienned) 1
Carrot (julienned) 20 g
Bamboo shoots (julienned) 20 g
Oyster sauce (for sauce) 1 tbsp
Water (for sauce) 2 tbsp
Sugar (for sauce) 1 tsp
Ginger juice (for sauce) 1 tsp
Cooking wine (for sauce) 1 tsp
Cornstarch (for sauce) 1 level tsp
Stock (for simmering liquid) 50 ml
Oyster sauce (for simmering liquid) 1/2 tbsp
Sugar (for simmering liquid) 1 tsp
Cornstarch (for simmering liquid) 1 tsp
Oil (for simmering liquid) 1 tbsp

Preparing the Squash

Peel and deseed the squash, then hollow out the center.

Preparing the Filling Ingredients

Soak the shiitake mushrooms and wood ear fungus until soft, then julienne them. Julienne the straw mushrooms, fried gluten, carrot, and bamboo shoots as well.

Making the Filling

Mix the sauce with the julienned ingredients until well combined. Transfer to a microwave-safe container, cover with plastic wrap leaving a small opening for steam, and microwave on high for 1 minute to set the filling.

Cooking the Dish

Stuff the filling into the hollowed-out squash, place in a microwave-safe container, and pour in the simmering liquid. Cover with plastic wrap leaving a small opening for steam, and microwave on medium-high for 4 minutes. Serve immediately.
