Mala Spicy Zucchini with Oil Dressing

Mala Spicy Zucchini with Oil Dressing

Ingredients

Zucchini 1000 g
Salt 10 g
Dried chili peppers (stemmed, seeded, cut into segments) 20 g
Monosodium glutamate (MSG) 2 g
Soy sauce 25 g
Sesame oil 25 g
Sichuan peppercorns 10 g

Step 1

First, peel the outer skin of the zucchini, wash it thoroughly, then cut it into slices that are 7 cm long, 3.5 cm wide, and 2 mm thick. Remove the stems and seeds from the dried chili peppers, and cut them into 3.5 cm long segments.

Place a pot on the stove and bring water to a boil. Once boiling, add the zucchini slices. When the water returns to a boil, remove the zucchini slices, place them in a container, spread out to cool, then sprinkle with salt and MSG to marinate until flavorful.

Place a wok on the stove and pour in sesame oil. Add the Sichuan peppercorns and fry over low heat until they turn deep purple. Remove and discard the peppercorns, then add the dried chili peppers and fry until they are also deep purple. Pour in the soy sauce to make the mala savory sauce, then pour this sauce over the zucchini slices, mix well, and serve.
