Ingredients

Pork fat (boiled in water to 60% done, sliced into thin pieces) 300 g
Chicken meat (minced) 75 g
Scallions (finely chopped) 20 g
Ham (finely chopped) 40 g
Eggs (beaten) 2 g
Wet arrowroot starch 40 g
Dry arrowroot starch (for dusting) 40 g
Black sesame seeds 65 g
White sesame seeds 75 g
Shaoxing wine a pinch
Fine salt a pinch

Prepare ingredients

Boil the pork fat in hot water until 60% done, remove it and slice it into thin pieces, and mince the chicken meat. Finely chop the ham and scallions. Then combine the minced chicken, ham, scallions, wine, and salt and mix well.
